There's more to the Caribbean diet than fresh fish and rum punch... although, I wouldn't really complain if they ended up making a steady appearance on the menu ;) Here are three must-tries if you find yourself in the beautiful twin island nation of St Kitts and Nevis: Johnny Cakes These little cornmeal muffins are traditionally eaten for breakfast with salt fish, fried plaintain and boiled eggs and are popular across the Caribbean as well as the Atlantic Coast of the US. The cakes are fried or baked and the mix of salty and sweet condiments that usually accompany them at breakfast definitely make them an unusual and hearty way to start your day... you definitely won't be getting hungry any time soon! Goat Water Not the most appetizing name for a dish! But the goat water of St Kitts and particularly its little sister island Nevis is revered among locals, with most restaurants serving this special dish on Saturdays. Although the "water" in the name may give the impression of a thin, flavourless broth, "water" in the Caribbean - whether goat water, clam water or conch water - refers to a flavourful stew in which the hero ingredient is cooked along with breadfruit, onions, tomato, spices and veggies. Goat water is usually served with the aforementioned Johnny Cakes or bread. Ting and Bitters This popular Jamaican grapefruit drink is a staple of the Caribbean with most drinking the sweet and tart soda with Angostura Bitters. I tried some Ting (yes, bad pun) at Sprat Net, a local restaurant attached to a fishing operation where you can feast on huge, meaty lobsters while taking in some Caribbean tunes. If you want something stronger you can also try a Ting with a Sting - just add a generous dash of rum :)
